It's Friday, I'm In Love: Swoob

Confession time.  I've stuffed my bra.  I've stuffed it MANY times with just about everything that you can think of.  Cell phone.  Keys.  Lip balm.  Cash.  Forms of ID.  My inhaler.  Gum.  Pepper spray.  Don't worry, this is a safe space.  You can admit it, too, if you've stuffed yours. the fit beast feasts: protein pancakes with protein fluff

Sorry, I don't have a better picture.  I was too excited to eat these to take different shots and waste time editing.  Girl's gotta eat!!!!

I've spent way too much time exploring Pinterest and Google for recipes for protein pancakes and wasted way too many ingredients on bogus outcomes.  Finally, I've found something that tastes great, does NOT weigh as much as a hockey puck, and it so incredibly easy to make.

In a blender, combine:
1 cup rolled oats
1 cup low fat cottage cheese
1 cup egg whites OR 6 egg whites
1 scoop of your favorite protein powder
1 teaspoon vanilla extract (optional)

Personally, I'm all about the Cellucor Performance Whey line, so I made this batch with their Whipped Vanilla, but made some with Molten Chocolate Lava today. Let it blend together until smooth and then go to town on a hot griddle!

Mine made about eight 4" pancakes.

Here's the important stuff, the macros per pancake:  90 calories, 1 gram of fat, 9 grams of carbohydrates, and 10 grams of protein.  Per pancake.  10 grams of protein and only 1 gram of fat.  Holy guacamole!!!

Now for the fluff.  I mean, there are no words.  I've never really been a fan of butter and syrup on my pancakes.  Maybe it's because I grew up consuming sourdough pancakes and all they need is a little bit of butter to make them amazing.  Regardless, I don't buy into the Walden Farms sugar free syrup madness and needed something different than my regular ol' peanut butter to top them.  Inspiration hit me yesterday morning when I was thinking about this uber naughty whipped peanut butter frosting I used to make.  So here's my new favorite concoction:  Marshmallow and Peanut Butter Protein Fluff.

In a medium sized bowl, combine 1/2 cup creamy peanut butter and 1/2 cup plain greek yogurt.  Beat with a hand mixer until fluffy.  Hence the name.  Der.  Add 1 scoop of Cellucor's Peanut Butter Marshmallow Performance Whey and continue to whip until well mixed.

Store in an air-tight container in the refrigerator.  I limit myself to 1 tablespoon when I eat my 2 pancakes for breakfast, but here are the macros:  35 calories, 2 grams of fat, 1 gram of carbohydrates, and 8 grams of protein.

Cake Batter Protein Energy Bars

To anyone who's been in my apartment, my love for my protein powder tubs is obvious.  I probably have 11 of them stacked above my kitchen cabinets and my new favorite brand, Cellucor, is leading the pack with the most containers.  Besides the amazing benefits of supplementing your diet with protein powders, another reason I love them is for the multiple recipe options!   Pancakes.  Waffles.  Bread.  Brownies.  Flavoring for my morning oats.  But here's my new favorite:  energy bars.

As a kid, I had one snack that I hardly ever made but often coveted:  peanut butter balls.  I remember they had powdered milk, peanut butter, and lots of sugar.  They were so good, especially if you put them in the freezer, for a summer snack.  Since I've lost my childhood metabolism and have gained an education and awareness of my own nutrition, I'm a fan of this alternative.

In a small bowl, combine the following and mix well:
1 cup rice krispy cereal
1/4 cup oat flour (you can make your own by putting oats in your blender)
1/4 cup Cellucor Cor-Fetti Cake Batter Whey (read to the bottom of the post for a discount code)
1/4 teaspoon salt

In another bowl, combine and whisk together:
1 teaspoon vanilla extract
5 teaspoons agave or honey
3 tablespoons peanut butter or your favorite nut butter

Add your dry ingredients to the wet ingredient bowl, and mix well.  If it looks like your mixture is too wet, add some more cereal.

Line a flat bottomed baking pan or Tupperware container with plastic wrap or wax paper. You'll want to make sure you have enough to cover both the bottom and the top of the peanut butter mixture.  Put all of the mixture in the container, smooth out to create a flat surface, and cover with remaining plastic wrap or wax paper.  Use your hands to press down on the covered mixture to create a more compressed bar.

Let mixture chill and set in the refrigerator, covered, for an hour.  I like to cut mine into individual servings, wrap in plastic wrap, and leave in my produce drawer for easy access/munching.

Want another great reason to eat organic?  Want more proof as to why you should stay away from processed foods?  A U.S. owned meat processing plant in China just got busted for trying to reprocess old and discarded meat to extend its use-by date.  I just read this article on and was sickened to learn that workers were caught on tape picking up meat from the floor and putting it in processing machines.  I should mention that this processing plant supplied processed meat to fast food companies like KFC, Pizza Hut, and McDonald's.  The plant has now been suspended but I can't help but think about all the similar reports and unreported incidents that never make the news.

Processed and "fast-food" might be convenient, but isn't it worth it to fuel your body with fresh, healthy, quality, CLEAN foods?  Think about what you're putting in that body of yours!!
